what can i do with it? apart from eat it on its own. cupboards a bit old mother hubbard-ish at the mo!

Very nice in a Breville-style toasty, especially using pitta bread.

I have made curry with it before, instead of paneer, but bear in mind it's salty already.

children have had pasta & parmesan for dinner, we are down to bare minimum!

would it be nice in an omlette??

possibly, but it won't melt into it, so texture might be a bit odd.

Do you have to eat the halloumi tonight?

Or halloumi wrapped in bacon rashers on skewers. Lots of black pepper.
Rice.
dressing could be oil&vinegar, plus any herbs lying around.

Got any couscous? Great storecupboard dish, couscous with a can of chickpeas in, a squeeze of lime juice, mix in some griddled veggies, courgette and pepper always good, some onion and a bit of garlic, then slice and griddle the halloumi and put it on top and serve hot!
