How could I make a blue cheese salad dressing?

It just occurs to me it would be rather nice as I have chicken breasts and avocado.... anyone know how I would go about it?

First time I have even opened this particular recipe book.

Makes about 350ml/12fl oz/1.5 cups.
75g/3oz blue cheese (Stilton, Bleu d'Auvergne or Gorgonzola)
150ml/1/4 pint/2/3rds cup medium-fat plain yogurt.
45ml/3 tbsp olive oil
30ml/2tbsp lemon juice
15ml/1 tbsp chopped fresh chives.
ground black pepper

Remove the rind from the cheese and combine with a third of the yogurt in a bowl.
Add the remainder of the yogurt, the olive oil and the lemon juice.
Stir in the chopped chives and season to taste with the ground black pepper.

Well that was very nice - went down a treat, especially with dd who ate it with a teaspoon (she's 2, hence general laxness concerning table manners).
