pea mint and courgette soup

i had this soup in cornwall last year and cant find a recipe ,anyone got one ?

Don't have a recipe for this but would imagine based on my leek & courgette soup experience that you need less stock than usual because of the high water content of the courgettes. Rough guide is 1lb of veg to 2 pints of stock and in this case, I would reduce it to no more than 1.5 pints of stock. Mint to taste.

I have this:

Ingredients
250g cooked peas
2 tbsp mint leaves, plus extra for garnish
500ml stock (chicken or vegetable)
50ml double cream
½ tbsp olive oil, for serving

Method

  1. Place all the ingredients except the olive oil in a blender and blend until combined.
  2. Divide between two bowls, drizzle with olive oil and garnish with mint leaves.
  3. Serve hot or chilled.

thanks for that ,the soup i had didnt have cream in it ,it was like a clear soup ,i might have a go and see if i can replicate it
