How to use up roast pork?

Due to overcatering for sunday lunch I had half a joint of roast pork left.
We have had roast pork and stuffing butties for 2 days now. Does anyone have any ideas how I could use the rest up for tea tonight?

I'd chop up whats left into cubes, put it in a caserole dish, add a couple of chopped carrots, swede, onion and other veg you have 1 pint or so of pork stock and whack in the oven for 1-2 hours and serve with crusty bread or mash.

Or similar and can be done in a pan on the top and put a cupful of rice in and make a rissotto, check the water levels.

Thanks Furball. I fried up onion & green pepper, added chopped meat carrots & chicken stock and simmered for 40minutes. Added a few broad beans at the last minute and served with mash.

It went down very well.

soak in soy/honey/sherry or marsala/garlic/5spice then use in stir fry.

or sarnies w/apple sauce.

or cold w/baked spuds and salad.

Someone on MN suggested putting it in a stirfry when I had some - I did and it was lovely.
(Too late to be any help to you, Dozeynoo, but I thought I'd mention it in case anyone reads this thread in future!)
