This was a variation on a pasta recipe that someone (Cod?) posted ages ago which came from the Waitrose site.
Ingredients:* drained can of tuna
- 2 slices of bread blitzed into breadcrumbs
- one egg, beaten
- one spring onion, finely chops
- grated cheese, a handful (I used cheddar but you could use parmesan
- a scattering of mixed herbs
- finely grated carrot
Stick it all in a bowl and give it a good mix. Make walnut sized balls with the mixture. It made around 20. Slightly flatten the balls.
Fry them in a little bit of olive oil. Turn over when browned. Took about 6-7 minutes. You could cook them in the oven too I think but I have never tried.
Kids loved them.
