Fishy nuggets - a hit with apathetic eater DS1

This was a variation on a pasta recipe that someone (Cod?) posted ages ago which came from the Waitrose site.

Ingredients:* drained can of tuna

  • 2 slices of bread blitzed into breadcrumbs
  • one egg, beaten
  • one spring onion, finely chops
  • grated cheese, a handful (I used cheddar but you could use parmesan
  • a scattering of mixed herbs
  • finely grated carrot

Stick it all in a bowl and give it a good mix. Make walnut sized balls with the mixture. It made around 20. Slightly flatten the balls.

Fry them in a little bit of olive oil. Turn over when browned. Took about 6-7 minutes. You could cook them in the oven too I think but I have never tried.

Kids loved them.

Looks good, might try for DD2 - she is a pain with eating

Could also try with tinned salmon.

DS1 and ds2 both LOVED them. Ate leftovers for breakfast too
