potato mountain!

i have a new potato mountain in my larder. I have lots of spuds in the garden too that are ready to be dug up. I have friends coming down for the weekend, any ideas on how to use them up imaginatively without them getting them for every meal, please?

Mashed potato freezes very well. Could always try that as a way of keeping them.

What about fish cakes for dinner? Very yummy, but not too heavy on the potato.

Gnocchi?

Struggling to think of a dessert that you can sneak potatoes into though!

potato soup

savory potato pancakes

slice them thin and fry them in a pan with a bit of oil/butter salt and pepper and bit of onion and bell pepper, and some cheese

Homemade chips [yummy]

Chessy Potato (sp?) Chop onion and put on the bottom of a ovenproof dish. Peel and slice potatos and layer on top as deep as the dish. putting a splash of milk over each layer, the pour over the top more milk so it fills 1/3 of the dish. Pop in hot oven for about an hour and a bit then add grated cheese for he last half hour.

variation of furballs recipe that we had on holiday when we were ussing up all the contents of teh fridge before coming home (children loved it too)

Slice up potatos and lay in a dish with some onions sprinkled on the top. Fry bacon peices and also scatter all over the top. lastly, make a cheese sauce and pour over the top. Top with more bacon bits and a little grated cheddar. Bake in over for an hour and then grill till everything on the top goes nice and crisp and golden.....

Potato salad?

Make some sheperdspie and freeze for a night when you can't be bothered to cook?

Other than that I'd second gnocchi as a good use.

You could make potato croquettes (sp?) too and freeze them for future use.
