beans on toast for the tiglets!!

PavlovtheCat · 26/07/2007 13:09

really basic. One onion, chopped finely, tin tomatoes chopped up, little bit of sugar (optional), little salt and pepper to season. fry onions until clear/golden, add tomatoes, simmer for 10 mins, add sugar, salt, pepper, cook for another 5, should be ready. I usually cook mine for a little longer, and add some basil (fresh if around, if not dried) and a sprinkle of oregano if no fresh basil around.

What indian spices do you have?

PavlovtheCat · 26/07/2007 13:11

then you can add to it as you wish, I am having red peppers and courgettes sliced thinly and fried just after the tomatoes. You can add any vegetables, but peppers are the best, or add a spoon of pesto, mince meat for bolognaise, very good to use as it quick and can be used for a base for anything!

covered in cheese....mmmmm!

PavlovtheCat · 26/07/2007 13:11

sorry that should say 'fried, just after the onions' not tomatoes. doh

prettymum · 26/07/2007 13:12

a touch of chilli in it is great in tomato sauce.

Do your LOs have spiced food? You could fry the onions with cumin and coriander?

To be honest, even without any of the seasoning, you can make it with just onions and tomatoes as a base.
For DD, I add a some water to the sauce at the beginning, to reduce the acidity of the tinned tomatoes a little.

PavlovtheCat · 26/07/2007 13:27

DD loves spaghetti bolognaise.

I cook up loads for us, with herbs but no salt and only quarter of stock cube for the whole lot, and near the end, take hers out of the mix, add a little more water, cook for a few more minutes, and season ours with stock cube and salt as we like and cook ourse for a bit longer. I make enough for about 7 pots in the freezer, add some chopped spaghetti to it, and defrost as I need it. She gulps it down...

Lullabyloo · 26/07/2007 13:29

PavlovtheCat · 26/07/2007 13:31

PavlovtheCat · 26/07/2007 13:31
Grin
Lullabyloo · 26/07/2007 13:32

even without onion you can make a really speedy good tomato sauce ..fry a couple of finely chopped cloves of garlic & big handful of chopped basil add jar of passata or tin of chopped tomatoes...cook down & then whizz....delicious

Lullabyloo · 26/07/2007 13:32
