may be a stupid question but is there any reason why I can't use red split lentils rather thay puy. I have unearthed a packet of puy from the back of the cupboard by they are past their sell by date. Have no idea about the difference.

imvho I don't think it's a biggie. Puy letils stay whole so a bit more meaty in texture whereas red lentils will go mushy which I quite like tbh.

I've used both red and puy in veggie lasagnes and they just give a different taste but both are good. Puy definately have a meatier texture and a more sticky taste I think.
