Going away in a few weeks ,renting a house with fairly well equipped kitchen.
Want to do an early drinks/nibbles thing the evening after we arrive for around twelve friends (am not organised enough to do dinner for so many anymore as ds is only 3...my excuse anyway )
As well as usual olives,crisps,spicy almonds etc want some hot picky things....was thinking bruscetta with tomato & basil & some with roasted peppers,,maybe mozerella & chilli too
umm..spicy roasted new potatoes...garlic mushrooms...asparagus in palma ham...cheeses & bread basket
That kind of thing...have to cater for meat/fish eaters & veggies....any ideas very welcome but not too tricky & time consuming as dont want to spend all day in the kitchen

M&S do some lovely savoury pastry cases. We brought these to Spain in hand luggage on the basis, if they survive they survive. They did.

I carmelised some red onions, placed them in the base, placed some oven roasted pepper on top and finished off with goats cheese. Stick them in the oven for about 5 minutes. Wonderful, impressive and really easy. You could even carmelise onions the day before and transport in a tupperware.

Sliced aubergine, brushed with olive oil, grind of black pepper, grated cheese, grill it until cheese is almost crunchy.

Halved spicy meatballs on blini's or small rounds of bread, brushed with oil, and toasted.

Chop up to around 1 inch - 1 red pepper, 1 yellow pepper, 1/2 a Fennel, 1 Courgette. Drizzle in Olive Oil. Roast in hot oven for 1/2 hour. Leave to cool- Slice a ciabatta loaf, drizzle with a little olive oil and put under grill until golden. When out, rub with garlic and leave. Whizz up veggie mixture in processor and smear on to ciabatta.

This is my dh favourite - in fact on Saturday for our supper we are having the roasted veg bruschetta as above, tomato & basil bruschetta, various types of Salami, sliced mozzerella , Artichokes in oil - with large glasses of red wine.

How bout a spanish omlette?
I had a yummy one for lujc the other day - but should have used more eggs.
Eggs, chopped chicken, chopped cold potato, chopped tomatoes and cheese, sprinkle with paprika and cook. I presume the more egg yuou use the more solid/finger friendly it would be.

smoked haddock pate / dip thing.

3 smoked haddock (yellowy one) one fillets to a medium tub of cottage cheese, big squeeze of lemon jiuce, salt and pepper, all in the blender. Made in 30 secs. Good with toast / pitta

Did Franny's Dukkah today....absolutely delicious

Cod's pastry shapes pretty good too with parmesan & toasted sesame seeds or poppy seeds....ds cut them into moon shapes & ate most of them

pimientos del padron- they are in season and sold in waitrose and famrers markets if anything near you. Basically they look like jalapeno peppers but they are much milder- except for one in 10 which is fiery. Easy, peasy- fry in oil until blackened and wrinkly and liberally sprinkle with sea salt. Folk can pick up the stalk and munch.
Quails eggs with celery salt always go down well.

what is it called where you oven bake thin slice of baguette? Anyway do that - bake in hot oven for a few minutes to crispena nd take out and rub with cut garlic clove. This keep in an air tight container.

Saute an onion, garlic and loads of mushrooms in butter (with bit of oil) cook for a long time so all the water had evaporated from teh mushrooms and it is condensed. Add more butter, scrape mushrroms to one side and make a small roux in the corner of the pan (on;y couple of teasppons of flour and a dash of milk.) cook off for a while to thicken and then puree.

Makes a garlic mushroom pate.

the mushrooms stuff keeps for a few days in teh fridge too.

serve with parsely.

Oh this I think I got from here - cut and deseed chery toms and pipe / spoon in galric and herb cream cheese. Dead easy and so many people commented on it.

fry halloumi with olive oil and some chilli, or make kebabs with it. great for veggies.
