Lentil Moussaka

I got this recipe from my lentil packet. I wanted to share it - it's yummy!

3tbsp olive oil
1 large onion, chopped
2 cloves garlic, crushed
2 sticks celery, chopped
400g tin chopped tomatoes
200g dried continental lentils
2tbsp tomato puree
1tbsp dried thyme
425ml (3/4pt) vegetable stock
1 large aubergine, sliced
Cheese sauce (about 450ml they suggest a jar)
Cheese to sprinkle
1/2tsp paprika

Heat the oil in a large saucepan and fry the onion until soft. Add the garlic, celery, tomatoes, lentils, thyme, puree and stock. Boil rapidly for 10 minutes, then simmer for 25mins until the lentils are tender and most of the liquid is absorbed.
Meanwhile sprinkle the aubergine slices with salt and leave for 10mins, then rinse thoroughly and dry. Grill the slices until golden.
Pour some of the lentil mix into a shallow oven dish, then a layer of aubergines, and continue to layer finishing with the aubergines. Spread the cheese sauce over the top and sprinkle on cheese and paprika and cook in a preheated oven at 190C/375F/Gas5 for about half an hour until brown on the top.

Yes I think it's the same as puy! We're not veggie either and I thought dh would complain that there was no meat! He liked it though.

Do you think any old lentils would do? Having made it, do you think its freezable. I have an aubergine and want to do something different with it.

I don't know about using other lentils - it was my first attempt at using them! I have frozen some of the lentil mixture as I found I had a bit much so I hope it will be ok as I'll be giving it to dd! Don't know about freezing it once it's 'compiled' though.

Mimi how did it go? My DH enjoyed it but was hungry too soon after but I think we just had too small portions and probably should have had potato or veg with it.

Not good I'm afraid Pinky. He ate 2 fork fulls, then pushed it around his plate like a baby. He's a pest.

The DSs seemed to enjoy it though. I thought it was really tasty, and will definitely make it for my mum as she's a vegetarian and will love it.

I wish dp would be a bit more adventurous with veggie meals because I love them.

I made it too (didn;t follow the recipe exactly but my own bastardized version of, main ingredients the same, chucked in some cooked new potatoes, sliced, as well) and it was scrummy

I even took leftoevrs to work for lunch the next day

DS had been to a party tho so didn;t have it, i think he would have picked out teh aubergine

What kind of stock did you all use? I used that Bouillon stuff which is quite salty. Dh's main complaint was that it was too salty.

I didn;t use stock

I just put in the tinned toms and puree,as I would if I had made a meat bolognese type sauce

isn't moussaka supposed to have potatoes in it anyway?

Ooh - chickpea curry? Was just saying to dh about 5 mins ago, must find a good veggie curry recipe! Will have a look.

Any more veggie recipies, esp ones which children might like, most welcome!!
