Is there anything in this wide wonderful world of ours that you can do to a courgette to make it good to eat?

I mean, really?

I've got one and a half surplus courgettes (big ones) after making a minestrone soup. Please tell me there's something good I can make with them rather than consigning to the compost heap at the end of the week when they've gone wrinkly.

Slice them into long thin slices from stalk down, Brush them with oil and barbeque. Serve with a sauce of minced garlic, olive oil and chopped fresh parsley and salt.

Chop into rounds or half rounds and fry in oil with garlic, in a pan you cover. Let it cook into a mush and stir through pasta with a shedload of Parmesan.

Bbc good food website has a lovely recipe for courgette lasagne. Lots of grated courgette, tomato sauce and maracapone, I think.

Ratatouille, slowly simmered courgettes with peppers, aubergines, good quality tinned tomatoes, garlic lots of olive oil & herbs. Absolutely delicious.

Fry with lots of butter and salt. Delicious.

Or courgette soup. Cook with stock till mushy, add basil, cream and parmesan and blend. Really really nice.

Courgettes are lovely fried in a bit of butter (or half oil, half butter) with a sprinkle of 5-spice
or lime zest and black pepper

My mother in law chops them up with little squared bits of potatoes fries them all up then adds egg. It's ridiculously nice. Mmmm might make that tomorrow...

Use a potato peeler and turn them into ribbons and make a salad with a mint and green olive vinaigrette (american recipe, zucchini = courgette)

Courgette bread (it's cake really) especially with a good handful of dark chocolate chips thrown in.
Even my DB, who hates courgettes, thinks this is good. Probably because it doesn't taste of courgettes.

Slice into fairly thin rounds, mix with a little olive oil, season with salt and pepper. Cook on a medium high heat in a frying pan or griddle pan. You want them to have a kind of golden / charred / caramelised look. Takes about 12 minutes and they’re lovely (they go really well with baked salmon).

Like Seatoski I prefer them raw...shave ribbons with potato peeler, add halved cherry tomatoes, toasted pine nuts and Parmesan shavings with lemon and good olive oil. Gorgeous!

Big dices, chopped mushrooms knob of butter and a drizzle of chilli oil. Bake in the oven. 😋

I fry them and add them to pasta sauces or curries, I use them for loads of meals, they are great fried with lamb steak and mushroom, some morrocan spice, in a pitta bread and hummus

Courgette soup is nice, particularly if you save half a courgette and grate in finely into the hot liquidised soup. So far all four of ny courgette plants are surviving the slugs so I may need to come back for more ideas!

My favourite way with courgettes - and why are they so big these days? They used to a lot smaller, some of them are like marrows! - Sliced into rounds, fried in olive oil till lightly browned and add crushed pepper and lemon juice.
