Is there anything in this wide wonderful world of ours that you can do to a courgette to make it good to eat?

I mean, really?

I've got one and a half surplus courgettes (big ones) after making a minestrone soup. Please tell me there's something good I can make with them rather than consigning to the compost heap at the end of the week when they've gone wrinkly.

I dip slices of courgette in batter and deep fry (along with battered onion/pepper chunks).
Serve on rice with sweet and sour sauce poured over. The fried veg "nuggets" freeze really well and reat in the oven.
Also love a courgette, pea, feta and mint quiche.
And roasted veg couscous (just roast in the oven alongside peppers/onions/baby tomatoes with a bit of sweet chilli sauce drizzled over).
Salmon and courgette spaghetti (Hello fresh) is absolutely gorgeous.

Cut into halves, through the middle then into chunks. Fry on long, cut side until blackened around the edges. Put in a shallow dish, cut side down and pour on cheese sauce until almost covered. Smother in grated cheese and bake until bubbly and golden brown.
It's my friend's recipe. I don't like courgettes, except like this.

I chop up and fry in olive oil, garlic, mixed herbs, salt and pepper. Quick and easy. Or just chop up and freeze for now.

It's possible to grate them, and hide in tomato sauce, or a sort of bolognaise sauce.

Dont laugh at me on this one, courgette and potato soup gets eaten by my courgette hating kids.

I feel sorry for people who don't like courgettes. They are my favourite vegetable. Roasted or fried til brown are amazing. They can be a little bitter if not brown.

Great ideas here about grating or battering and frying.

Grate and cook down in frying pan, having fried off some bacon lardons first, add crushed garlic

Then add a few tablespoons cream or creme fraiche and done pasta water plus lashings of grated Parmesan and black pepper, makes fab pasta sauce

Slice half centimetre thick, brush with olive oil, sprinkle with garlic salt.
Really hot grill until browned

I love courgettes! I just cut into Alice's or strips season and use spray oil and out in oven for 20 mins....Grin delicious

My favourite way with courgettes - and why are they so big these days? They used to a lot smaller, some of them are like marrows! - Sliced into rounds, fried in olive oil till lightly browned and add crushed pepper and lemon juice.

Courgette soup is nice, particularly if you save half a courgette and grate in finely into the hot liquidised soup. So far all four of ny courgette plants are surviving the slugs so I may need to come back for more ideas!

I fry them and add them to pasta sauces or curries, I use them for loads of meals, they are great fried with lamb steak and mushroom, some morrocan spice, in a pitta bread and hummus

Big dices, chopped mushrooms knob of butter and a drizzle of chilli oil. Bake in the oven. 😋

Like Seatoski I prefer them raw...shave ribbons with potato peeler, add halved cherry tomatoes, toasted pine nuts and Parmesan shavings with lemon and good olive oil. Gorgeous!
