Is there anything in this wide wonderful world of ours that you can do to a courgette to make it good to eat?

I mean, really?

I've got one and a half surplus courgettes (big ones) after making a minestrone soup. Please tell me there's something good I can make with them rather than consigning to the compost heap at the end of the week when they've gone wrinkly.

Baked stuffed courgettes? There are lots of recipes for courgettes stuffed with garlicky breadcrumbs, I think I had some stuffed with ricotta and breadcrumbs once.

Cut them into thin, long, bendy batons. Dip in milk, then seasoned flour. Shake off excess flour before shallow frying until golden and crispy, drain on kitchen paper and sprinkle with salt.

Grate and mix into mince meat for bolognese or meatloaf or whatever. Or grate and use in a frittata.
Grate and use in a cake.
Basically anything where you can use it grated is alright because then you barely notice its slimy horror.

I second fritters! Grate the courgettes, salt then and spread them out to dry on a rack or tea towel. Once the water had come out, mix them with feta, mint and egg, squash into little patties about the size of a flat golf ball and fry them.

Courgette and lemon drizzle cake.

Roast with some peppers, red onions, cherry tomatoes, garlic, olive oil. Season, add a tablespoon of tomato puree, a ball of mozzarella and return to oven until cheese all melted then stir through pasta for a Mediterranean Veg Pasta.

Roast a big tray of above, then add pasata and blitz for a tomato and roast veg sauce.

Spiralize and dress with olive oil and lemon juice for a salad.

Thinly slice and cook on a hot griddle, brushed with olive oil.

Potato and courgette soup.

Use in anything you do with mince.

Make chutney.

Ratatouille.

We have an allotment. Every year about this time I look at my seedlings in the polytunnel, and instead of planting 2 out, I plant 4.

2 is more than enough courgettes for a family of 4. 4 results in googling for recipes on a regular basis from august onwards.

Never grow courgettes if 1.5 has you reaching out for help. It won't end well.

Courgettes are lovely, I use them as a layer in lasagne, make ratatouile or just roast them in chunks.
My favourite way is to slice them finely and stir fry.

We make an amazing courgette pasta which the kids really love.

Grate the courgette and gently fry off with two finely grated cloves of garlic, the zest of a lemon and a pinch of chilli with a bit of oil. Season well. After 5-10 min add the juice of the lemon and then either some double cream or some mascarpone. Once all has simmered for a minute add to pasta with a good grating of Parmesan.

The sauce ends up being a green delicious mush, and the whole thing takes 15 min from start to table :)

you can grate them and use instead of (tinned) tomato in any recipe.
curries are nice
or cooked with onions and mince
or baked in a cake (if you have a trusted carrot cake recipe just switch for courgette.

Slice into rounds, steam lightly, dress with lemon juice and chopped mint. The mint really makes it.

Fry in very little oil or brush , salt and bake on a sheet until browned - eat as side dish or bake into frittata. With too much oil they can absorb it and it all gets a bit greasy.

Someone gave me a little spiraliser gadget from Lakeland - nearly spiralised all my fingers but DH has got the knack and churns out loads of courgette ‘noodles’ .The secret is to barely steam or just to blanch quickly in boiling water .

They go oddly well in a butternut squash and chickpea curry.

I like courgettes !

Cut into thin rounds and fry with mushrooms, seasoning and the sort of garlic that comes in a tube. Serve with pasta. (This is really nice, honest).
