Got a couple of friends coming over for dinner, want something simple to cook for a main course and pudding.

Ideas please

fish roasted with cherry toms, garlic, fine beans (blanche first), olive oil and herbs

new potatoes, with butter and lots of herbs (parsley and mint)

pudding strawberries and cream/ice cream

yes, but would beat out between sheets of cling film and stuff eg with cheese/pinenuts/spinach mixture to ensure cooked. or do chicken thighs and add veg etc bit later. new pots are lovely roasted too if you want a one-pot-meal.

if you want to splurge do king prawn starter, just stir fry with lots of garlic/butter/herbs and a little lemon juice at end

stuff chicken breasts with goats cheese
put basil leaves on top of breast, wrap in parma ham

cook in oven for about 25 mins at 200c

serve with new potatoes and veg or salad

you can prep the chicken in advance then just put in oven whenever

Chicken breasts stuffed with figs and bluecheese - very easy, very nice, serve with crisp salad and fresh bread.

Chocolate mousse or posh ice cream?
