and make a sausage casserole from scratch.
so i have soaked some black eyed beans and chickpeas.
i have sausages
tins of tomatos
onions
mushrooms
but i dont know what to do with them
ive not made anything using beans/chickpeas before, if anyone could give me an idiot proof/easy recipe i would be eternally grateful!!!!
oh ive got some red wine as well if i can use that.

You need to boil the beans first before you do anything else. I would do them in separate pans as they may have different cooking times. Boil them in plain water without salt as salt makes them hard.

It's important to really boil the beans for at least 10 minutes as it kills toxins present in all dried beans. Then you can reduce to a simmer if you like, and cook them till they're soft.

AFter that just make your casserole the way you normally would, adding the beans near the end of the cooking time with plenty of seasoning.

thanks anorak, i wouldnt have known that about the chickpeas/beans.
right ive boiled them both so now im browning my sausages and onion.
do i just bung everything else into a casserole even the wine?
sorry im a bit thick when it comes to casseroles, theyre not my strongest things!!!

yes that is sounding very good. black eyes don't usually need soaking i believe (for another time).
