The VEGANS are coming to town

Our vegan friends are coming to stay this weekend coming.

For Saturday night I was considering making red lentil shepherds pie (inc red pesto) served with broccoli and peas etc and can't think of anything other than a lovely big fresh fruit salad with raspberries and blackcurrants and strawberries for desert. Then our kids, their kids and us grown ups can all eat the same thing.

But not sure, what do you think???

And breakfast was going to be either cereal with soya milk and / or mushrooms on toast.

And then lunch the next day maybe roasted veg and cous cous for everyone? (Will have veggies sausages, beans etc in stock incase ids don't like any of the above.)

Does all that sound ok or do you have alternative suggestions?

I have had a version of that pie this evening and it was delicious. The potato was grated on this (I didn't make it) but mash is really successful and crispy on top with olive oil, I often do that even when not making a vegan pie.

make sure your stock doens't contain lactose, I've been caught out by that before

Can you lob some tinned chick peas or similar in with the red lentils? Give it a bit of substance.

I'm worried about my shepherds pie now. Have to use red lentils, that's what I did when I made it for the kids and it seemed ok but now I'm unsure.

Not sorted for deserts no, was going to do fruit and vegan ice-cream, happy and grateful to receive suggestions.

I think it will be ok with red lentils.

And you were worried about flavour without pesto - add things like soy sauce, balsamic vinegar, tomato puree, and it will take on plenty of flavour. I'm sure it will be nice!

NB worcester sauce is not even veggie so don't add that!
