My mum has got a spanish girl staying with her and as a bit of a joke I said they could all come over for a spanish meal but now need to decide what to make. Have got a good paella recipe but do I need to do anything with it? Or should I just do tapas? And if so what? There are 8 of us and we eat lots!

Make a tortilla if you can - especially if you have cold potatoes already or can boil some extra ahead. I make mine just by heating quite a lot of olive oil, cooking some red onion, adding the chopped potatoes and frying for a bit, then stir in quite a few beaten eggs and maybe some parsley. Turning it over is a bit tricky and you'll need a saucepan lid or something to avoid messing it up!

Don't overcook as quite nice not too dry but this really is delicious

I do Patatas Bravas, Spanish Omlette and Meatballs with paella.

Always goes down quite well.

Are you sure?
The last thing I would want if abroad was to be served a pastiche of my native food.

She's probably be loads happier with a roast and a crumble.
