What shall I do with my beetroot?

I've got 6. I usually roast them with other veg but I haven't got anything else to roast at the moment and there is quite a lot! How can I cook them and keep them a while?

Thanks for the inspiration CaliFudge - Borshch looks a bit complicated but I've found a beetroot soup recipe

I've just made a Nigel Slater beetroot cake.
It's cooking as I type.

You can boil them,skin them, slice them finely and dress with a mustardy vinaigrette and fresh mint,crumbled fetta and walnuts.

Or,boil and dice and mix with creme fraiche and mayonnaise and finely chopped capers and gherkins. Wonderful with herrings baked in oatmenal

grate into a rissotto - tasty and very colourful! you will only neeed one or two though.

chop into a veggie casserole?

roast with balsamic vinegar?
