I'm trying to make 'herb crusted cod' for dinner, but have just made it up as I've gone aong quite frankly.
I've made a mixture of breadcrumbs, flat leaf parsley, chives, garlic, lemon zest and juice, pepper & salt. I'm going to brush the cod fillets with olive oil, top the non-skin side with the mixture and bake in a hot oven for about 15 mins-ish. Does that sound right? Any tips from people who can cook fish?
