I have a horrible flu and want to cook something very easy and nutritious. I have some lamb and veggies - onions, carrots, potatoes, peas and some frozen peppers/courgettes/aubergines. I was hoping to just bung it all in a pan and let it cook but realise this might not turn out great so I was hoping for an easy and tasty recipe using these ingredients. TIA

Probably too late for today, but I would just fry up the onions and brown the meat, add a bit of plain flour and cook it a bit in the fat/juices. Add stock (optionally half stock/half red wine.) Then anything else you've got (garlic and herbs if you have any) and if possible cook slowly gas3 or equivalent. Or on the hob if you need it to cook more quickly. Would add the frozen veg towards the end if they are already cooked.
I rarely use a recipe for stew - just chuck in whatever I've got

I'd just brown the lamb (lightly dusted with flour to thicken the juices) bung everything else ('cept the frozen veg) in with bottle of wine, water and leave it to cook in a low oven.
