I have a bunch of bananas that are very ripe. Cant eat them all but dont want to waste them. What recipes are there for bananas they mums here like?

I am supposed to be getting ready to go and visit a client but can send you recipe for banana muffins later on? Needs several very ripe bananas.
They are delish and you can add dark chocolate!!
Or if feeling lazy and non bakey, just mash them on brown toast/butter yum.

Banana Loaf - use any old cup then all proportions are the same.

1 + 1/4 cups of SR flour
2 eggs beaten
1/2 cup of oil
1 cup of sugar
2 ripe bananas mashed
1/4 cup of chopped nuts. (optional)

Literally chuck it all in a bowl and stir, pour into a greased load tin and cook at 180 for about 45-mins to 1 hour. Use a knife to check it is cooked, if it comes out clean, hey presto.

Banana bread (south african recipe) - very nice

4 ripe bananas
1/2 cup butter
1/2 teaspoon bakingsoda
1/2 cup milk
1 teaspoon vanilla
2 cups flour
2 eggs
1 cup sugar
1 1/4 teaspoon baking powder

Mix everything except milk, bakingsoda and bananas.
Mix bakingsoda with milk and add.
Add bananas.
Bake at 350F or 180degrees Celsius for 1 hour

thank you So with half a cup of butter - do i melt butter and then measure out 250ml or do i just approximate?

I dont do that much baking - just fairy cakes with ds.

I do normal cooking like casseroles, roasts, sauces but never seen half a cup in recipe

frann'ys banana cake
4oz sr wholemeal flour
2oz butter
3oz raisins
8oz banana
1 egg
1/2 tsp mixed spice

heat oven to 180
mix flour,spice & rub in butter
stir in raisins
mash banana & beat egg & stir into flour mix

grease loaf tin well
turn oven down to 160
bake for 1 hr or until skewer comes out clean

mmmm baked bananas. Put in foil in oven until cooked. eat with cream or icecream. For luxury put chocolate in the middle.
Also good on BBQ.

The banana cake is in the oven right now. Got about 30 minutes till should be cooked. WIll check in 20 as fan assisted oven so it cooks quicker i think.

Didnt have wholemeal flour so used organic white and didnt have enugh raisins so added some chopped brazil nuts. Smells yummy. Couldnt lick the bowl tho as not allowed raw egg.

Either Banana Loaf (a variation on the others ...)

Banana loaf

Ingredients

? Vegetable oil for greasing the loaf tin
? 120g / 4oz sugar
? ½ level tsp salt
? 360g / 12oz self-raising flour
? 1 large egg
? 1tsp vanilla essence
? 125ml / 4fl oz milk
? 50g / 1 ½ oz melted butter
? 3 large ripe bananas, peeled.

Method
Preheat the oven to 180ËšC / gas mark 4. Grease a 1kg loaf tin with a little oil, making sure you get into all the corners.

Sieve the sugar, salt, and self-raising flour together into the mixing bowl.

In a separate bowl, beat the egg, then add the vanilla essence, the milk, the melted butter and 2 of the bananas. Mix together with an electric whisk ? it doesn?t matter if it is slightly lumpy.

Pour the wet ingredients into the dry, and mix together with an electric whisk.

Chop the 3rd banana into small chunks, and fold into the mixture.

Put all of the mixture into the greased loaf tin, and put into the oven for 1 hour. Test with a skewer ? put it back for another ten mintues if the skewer does not come out cleanly.

Remove from the oven and allow to cool a little before turning onto a cooling rack.

Can either be served in slices, warm, spread with soft butter, or cold, as regular cake.

or Banana Muffins

Ingredients

10oz (280g) plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
½ teaspoon salt
3 large well-ripened bananas (about 1lb / 450g in total)
4oz granulated sugar
1 egg, beaten
2-3 fl oz (60 ? 90 ml) milk
3 fl oz (90ml) vegetable oil
½ teaspoon vanilla essence

Method

  1. Prepare muffin tins. Preheat oven to 375 - 400°F (190 - 200°C), Gas mark 5 ? 6.
  2. In a large bowl, sift together all the dry ingredients (flour, baking powder, bicarbonate of soda, salt)
  3. In another bowl, mash bananas thoroughly with a potato masher. Stir in egg, milk, oil, and vanilla essence.
  4. Pour all of wet ingredients into dry. Stir until batter is evenly mixed, but still lumpy. No dry flour should be visible.
  5. Spoon into muffin tins. Bake for 20 ? 25 minutes, until tops are lightly browned and spring back when pressed gently.

Both are very much enjoyed by DS!

oo Muffins right will be saving this recipes for future reference as ds loves baking too. Couldnt believe how easy F&Z's recipe was. Ds could have made it himself.
