what do I do with these green lentils?

came with online shop as substitute but dh was in and doesn't know one lentil from another so didn't send them back

was wanting red ones to make dhal

now what do I do with em

You can use them the same but they are just a bit crunchier. Dhal would be fine and my sis makes a great dish with a lentil sauce and sausages....don't know the recipe though but google and bet something comes up.

I'm doing veg moussaka tonight which says red lentils but i prefer it with green.

They make a gorgeous soup. Saute some diced onion (and a bit of garlic if you like it), then add the lentils and a few potatoes in as big or small chunks as you like (or a few of each). Add hot stock and simmer for at least 1 hour, I like quite a bit longer until the lentils are cooked and the smaller bits of potatoe are mushing a bit. Towards the end add some pieces of cooked sausage - smoked sausage works best with this. Adjust the liquid levels if need be - I tend to make mine fairly thick because it's easier to thin at the end if you want, than to thicken it. This freezes really well so make double or treble the amount!

Serve with lots of lovely bread.

Or use green lentils as a base for a veggie shepherd's pie - just cook them and then add to onions, mushrooms etc., and perhaps a bit of stock, to give a meat-free base.

ooh portonova dh would appreciate sausage with his lentils

unsure about dhal since I usually put spinach in too normally there is contrast but it would all be very greeeeeeeeen

sausage and lentil i have made it with different sorts of sausage it is fine. particularly nice with grilled tomatoes.
