What do I do with really thin pork?

I have thin pork mini-filets or something.

Thinking about coating in flour with pepper and salt, and frying very quickly? Or is there a better option?

Reassurance that's the right thing to do is also useful . High temperature frying for very little time, right?

Yes thats right.

The bonus about doing them this way is if thers any fillets left over they're lovely in a sandwich with a bit of ketchup!

Give them a good bashing with a rolling pin first and you can do a sort of Wiener Schnitzel thingy with them

Ooh I'd fry them with mushrooms and madeira and make a white sauce to stir in, then serve with rice and veg. Yum yum.

coat in breadcrumbs and grill, add bechamel/cheese sauce then grate cheese on top and grill tip bubbling put out with nice fresh basic salad(toms lett spring onion etc)..gorgeous!..could even use ham.bacon between sauce and cheese?..god am staarving!
