i always thought i didn't like peppers but i had one yesterday in a salad and quite liked it so i want to use them again. anyway what's the difference in taste between red, yellow and green peppers?

green are bitter and gross.

Red, yellow and orange are sweet and delicious

I find red, yellow and orange all taste the same (i.e. nice), but green ones taste horrid. They're certainly sharper-tasting than the others - I've been told they're just unripe peppers, really.

Green is an unripe pepper.

Red, yellow and orange are all different types of mature pepper (ripe). They are green at the unripe stage

that may explain it. as a child i must have eaten a green pepper and thought they all tasted the same. god i wish i had been told otherwise. the one i had the other day was red and delish!
