Easy but yummy cheesecake recipes

Have a staff BBQ next week and have to take a dessert. Want to make a yummy cheesecake to impress them all. Will have to make it the night before. easy as possible please

This one comes out quite large and rich so is ideal for a big party. Easy to bake the night before, cool and sling in fridge. Sorry the measurements are American

Baked White-Chocolate Cheesecake:

Start with a normal cheesecake base made with digestive biscuits and melted butter in a 9in tin.

1 lb cream cheese eg Philadelphia
2 eggs
1/2 cup sugar
6 oz white chocolate

Melt chocolate in double boiler
Mix sugar, eggs and cream cheese
Blend in chocolate
Pour mixture onto base in tin
Bake 20min at 180C
Turn off oven and let cheesecake cool with the door ajar
Serve with something sharp eg dark chocolate sauce, raspberry coulis etc

I have an easy lemoncheescake non cook with ginger bisucit base if you want.

Mrs Badger how much is a 1/2 cup of sugar and large or medium eggs? Sounds yummy as I love white choc

1/2 cup = 125ml - just pour sugar into a measuring jug

I used medium eggs but can't imagine it matters much.
