Left-over Chicken.... ideas PLEASE!

Come on, lets have it - I need all ideas of what to use leftover chicken for.

No poncey ideas please - we are a back to basics family!!!

fry it in a pan add rice [cooked] and a couple of eggs to bind it ,,,,,, fried egg rice and chiken yummy also you can add peas ..... enjoy

it one my mum used to do on a monday if had roast chicken on the sunday i used to love it

fry veg (peppers onions etc..) then add chicken, any sauce that you have and have with noodles or rice.

Or you could coat in egg and breadcrumbs and bake in the oven.

make a casserole and add for last 15 minutes.

You can do allsorts really. even make burgers with minced chicken.

fajitas (buy one of those yellow box kits if you're feeling lazy).
Fry the chicken up with onions and peppers and chilli, pile into a wrap with salsa, greek yoghurt, grated cheese, guacamole etcetc.

Chicken pie tis yum.

Melt 25g of butter with half a chicken stock cube and when it is foaming add 25g flour. Keep whisking it for 30 secs or so then gradually whisk in 300ml milk. Simmer until it thickens (keep whisking so it doesn't go lumpy) Stir in 200g cooked chicken, some ham if you have any and 100g of peas or sweetcorn. Pour into a pie dish and top with pastry - shop bought is fine. Brush with milk, slash the top and bake at 200C for 20 minutes.
