never tasted it, but a tin of tomatoes and chorizo and some chilli slow baked in the oven with chicken, maybe a bit of Paprika, is lovely, just mess about.

Where did you find that Twig ?

Twiglett · 29/06/2007 18:21

on the sainsbury's site under chicken tonight spanish chicken .. that's the right one yes?

Twiglett · 29/06/2007 18:23

I'd brown chicken and remove then fry onions till soft, add garlic, add tin tomatoes and chopped mixed peppers, add thyme and possibly some veg stock and season to taste then cover and simmer

that should work

but spanish chicken should have spiciness to it IMHO .. so I'd also add some sliced chorizo at the onion stage

I just chuck some chicken portions in a casserole dish with a tin of chopped tomatoes, some chicken stock, green and red peppers chopped into largeish squares, onions or shallots and herbes de provences. Whack it in the oven until the chicken is cooked and then serve with either rice or potatoes.
