Rice salad - recipes please

anyone got any recipes for a cold rice salad tpe thing that would suit 'summer' (whenever that may come) eating?

pref. something that can be made in advance

Cold cooked rice, bits of orange,cucumber,pepper, toss with a little vinaigrette. Yum.
or same but with sultanas and flakes almonds instead of veggies.

Just be careful - cook the rice and chill it immediately. Then make/eat the rice salad as soon as possible. There is a horrible bacteria that grows in rice that can cause awful food poisoning.

Be really careful about putting a dish out in the warm weather as well.

Sorry to be all doom and gloom, but it can be really dangerous!

my aunt makes a famously delicious one with basmati rice (has to be tilda) cherry tomatoes, peppers, baby corn and red wine vinegar

brown rice, finely chopped peppers, spring onions, currants, peanuts. Mixed with dressing made of red wine vinegar, soy sauce and honey. YUMMY

tuna with sweetcorn, and then pepper, celery, tomato, palm hearts, avocado - basically any veg you have to hand

then extra virgin olive oil or red wine vinegar vinaigrette. Tastes better if you leave it to chill in the fridge first.
