I made egg & bacon & cheese muffins for breakfast today

and they were fantastic. Recipe as follows if you're interested...

8oz self-raising
1/4 tsp salt
1/2 tsp dry mustard powder
lots of ground black pepper
2oz soft butter
1 finely chopped medium onion
6 rashers of smoked back bacon, chopped
half a green pepper, diced
3oz strong cheese, grated
2 medium eggs
175ml milk

Fry onion, pepper & bacon. Sieve dry ingredients into a large bowl and rub in the butter 'til breadcrumb stage. Beat eggs & milk and stir into the mixture, add most of the cheese & fried bits. Mix well, put into muffin tins or cake cases. Sprinkle more grated cheese over the top and bake in medium oven for 25 minutes.

Brilliant for taking outside with a cup of coffee and the Sunday papers.

You can also make it with grated courgette in lieu of the onion & pepper.

They look good. I'm veggie though; maybe mushrooms would work in place of the bacon?

I've just made a lemon cake and it's sunk (Arghh) so I've filled the top with raspberries and will call it gateau - lol.

Jan - nice raspberry disguise!

You could try replacing the bacon with a bit of chopped spinach? I might also try a tomato & basil version.
