What the hell am I supposed to do with all the leftovers?

DH in his wisdom went out yesterday to get Sunday dinner, and came home with a 2kg smoked gammon. Very tasty, and I love it, but there are only 2 adults, a 5yr old, 3 yr old and 20mth old in this house.....What kind of appetite does he think I have?
Anyway, I need ideas for child friendly meals for LOTS of leftovers.....

Ham keeps for ages from fresh, and freezes too. gorgeous just hacked into thick slices and done with egg and chips!

Would slice some, and freeze (for butties as Podmog suggests) and chop some up and freeze to add to pasta/pizza/quiches/rissottos/ pies (for pies, mix with leftover chicken when DH comes back with oversized hen next week; add onions, mushrooms, sweetcorn, etc& white sauce then top with pastry)

Thanks for them, it looks like i will have enough left to try all these ideas! and you are right, he probably will bring back an oversided chicken next week!
