I want to use some apricots and thought a nice cake with apricots in would go down well when we have guests tomorrow. Any tried and tested recipes?

I do just a normal 2egg, sponmge cake with chopped apricots in...top sprinkled with crunchy sugar....sometimes combine it with chopped glace cherries too. It's not glam, but very nice

I've got fresh apricots by the way (forgot to add)

I do it for the children, as they don't realise they are being fed dried apricots by stealth mmmwah ha hah haaa!

filthymindedvixen · 16/06/2007 10:26

ooh, did you mean fresh apricots???

Just halve them and bung them in the oven with a splash of booze and some spices and then serve them with clotted cream

Better go shopping. Might still try the basic cake just with chopped fresh apricots or do you think it would go soggy?
