Doing a BBQ for 40 people what would you do

lots and lots of sausages and burgers on the bbq and maybe jacket potatoes and chicken drumsticks in the oven and a big bowl of salad. don't make it too stressful for yourself

I would also do a pesto pasta salad to bulk things up and maybe you could do corn-on-the-cobs?
