Has anyone got a recipe for frosting/icing/filling I could use to top carrot cake? Preferably something which hardens a bit on the top, you know the type of thing, the sort you get on shop-bought muffins! I've made the cakes but they look a little plain on the top and they're for the cake stall at school so of course I want them to look lush so that everyone things I'm fabulous!

Icing sugar & orange juice - 6oz to 2 tbsp.
Beat together in a bowl then drizzle over cakes.

Medium fat soft cheese & icing sugar.
Depends on how much you need but ratio is
2 x 200g packs of soft cheese to 200g icing sugar but this amount would do the top and inside of a big sponge cake but you get the idea!
