Any other ideas for hot weather will be welcomed . All my cook books are in a container on a big ship floating somewhere in the ocean?

Do you think you can get parsley?

This is a warm potato salad.

Mix red onion, chopped parsley, 2/5ths red wine vinegar, 3/5 olive oil, mustard, garlic clove crushed, seasoning.

Cook new pots, add to above whilst still warm and serve.

Can you tell Im sat here doing my shopping list?

quokka · 15/06/2007 09:31

Toss potatoes, bacon and big bunch of watercress in dressing.

can you get parmesan cheese?
you could do ceasar salad

lettuce (any greens really. i lilke it with rocket, watercress and spinach)

juice of one lemon
garlic (to taste)
oil
couple teaspoons of mayo
whisk till it's creamy
then add some parmesan and pepper and mix with lettuce

you can add cooked chicken, or seafood or whatever you have on hand. i did potato croutons a la nigella the other night and they were good too.

wish i was in singapore - sat in flooded south yorkshire with all these fab summer recipes, but all i want to eat is treacle sponge...

cucumber salad to serve with any grilled/barbied fish.

peel, deseed and dice cucumber. finely chop red onion. dress with tbsp white wine vinegar, teasp fish sauce, 1/2 teasp sugar, fresh coriander, finely chopped red chilli

Pinkveto · 15/06/2007 09:56

spiced two bean salad (if your bowel can handle it!)

can butter beans, can cannellini beans, 9oz sugarsnap peas cooked and cooled, 3 toms chopped into eighths, 10 sliced radishes 6 sp onions, handful mint.

Toss above in olive oil, lemon juice and ground cumin.

Make dressing of 8 fl oz yoghurt, 2 tbsp lemon juice 1 tbsp olive oil and crushed garlic clove, whisk together dress just before serving.

I am now going to supermarket in driving rain to get ingredients for something comforting like lasagne...

Sunshinemummy · 15/06/2007 09:59

I have two I like.

One is boil potatoes, chop up some spring onions and chives and put in a bowl. Make a vinaigrette with lemon juice and zest, olive oil, gralic, grain mustard and S&P. Toss all together.

Other is boil potatoes, chop a shallot and some dill. Make a sauce with mayo (you can make it but I use shop bought), some English mustard and olive oil to thin to right consistency, S&P. Toss together with some capers (I like the ones preserved in salt). This one is really good with fish.

CuddlesomeCod · 15/06/2007 09:59

both of htose sounds great

quokka · 15/06/2007 10:04

not sure about grapefruit and mango, but readily available here! Gosh your knocking them out now!

S'pore is VERY humid. Thankfully ds1 has a fever so all the windows are closed and the aircon on. Dh doesn't like it on all the time, which is fair enough as we are on the 18th floor so get a good breeze (of hot air)
