Ideas for Raspberries please!

I've got tonnes of raspberries (well not tonnes but lots and lots) my fruit bushes are producing well this year. Does anyone know any good recipees for ice-cream or sorbet? (i've got an ice cream maker) or any other good suggestions, I've had them on cereal, with cream, hot, as sauce on ice cream, with apples etc - need some more ideas. Thanks!

Send them to me. The dcs get to most of ours first and ds2 and dd2 eat them green, so what hope have I got?

Simple, but delicious raspbery pudding:

punnet of frozen raspberries

raspberry jelly

1/2 pint of single cream

Mash the raspberries (I use a potato masher) in a bowl until they are in smallish pieces. (They must be frozen for this recipe).

Dissolve jelly in 1/2 pint of boiling water. When jelly is totally dissolved, pour over the raspberries and mix together. Add the cream and stir well. (Do make sure the mixture is cool enough to add the cream or it will curdle, but the frozen raspberries cool it fairly quickly). Leave to set, or pour into individual bowls and leave to set.

This can be served on it's own, or with a dollop of whipped or thick cream on top and perhaps some chocolate shavings.

It can also be poured into a flan sponge and topped with cream and some fresh raspberries or chocolate for another dessert idea.

cranach ( scottish recipe with oatmeal, cream and raspberries) truly delish..

maybe juice em..i juice strawberries..add to apple juice

crumble with other fruits..

They make yummy lollies...whizz some up with a little sugar and orange juice (to taste) and freeze in lolly moulds.

Thanks for the ideas, I've already made jam and given lots away too, my dd won't eat them but my puppy does - too good for him though! Love the look of the cinnamon tart, will try that and Nigellas dessert recipe (not the pavlova - too challenging for me!) and I will make a summer pudding when I've got some currents, will definitely make smoothies too as dd will probably drink those - she's just turned 2 and is getting fussy. Thanks for the suggestions, I knew mumsnet would come up with ideas!

Puree, sieve and mix with a little sugar syrup and sparkling white wine - or champagne. SOOOOOOO delicious. Called The Pink 'Un.

Or just put them in a parcel and send them to me. They are absolutely my favourite thing to eat in the world!

Make lemon muffins and stir in a handful of fresh raseberries. The combination of flavours is wonderful. You can freeze them and defrost when you need them.

this one is so easy and lovely....

dollop some greek yog or cream into bowl, add layer of raspberries and then a layer of crushed hob nobs , repeat until bored or bowl full...

Either eat immediately or leave overnight -- both gorgeous

Thanks for all the suggestions. I made the Raspberry and cinnamon cake and its gorgeous. I've got some greek yoghurt so I'll try the ice lollys and the biscuit concoctions. Will have to try some of these boozy raspberry drinks too! They're almost over now though so not enough to send out I'm afraid - grow your own - it was only one little plant 2 years ago, well worth the purchase price and a bit of TLC !
