I am making dinner for 6 people tonight. One is vegetarian, one is vegan, one is on a carb free diet (but will probably lapse anyway), and the rest are happy to eat anything at all (thank god!)

I really don't know what to make.
I was thinking about doing tortilla wraps. I usually make my own so they are dairy free, and that way I can make various fillings, and they can pick and choose, but this seems a little boring.

Any ideas?

Doesn't sound boring to me. Only other thing I can think of is a veggie curry, but then cauliflower always seems to feature and that really is boring.

For vegans I usually make a spiced roasted butternut squash salad with spinach and red onion and a warm puy lentil salad with herbs and roasted peppers. Both these salads are good with the addition of goats cheese or feta and go well with simple grilled fish or chicken.

Thanks, I thought of curry too but I'm not very good at them.
Another option is to do a veggie terrine with harrisa, roast veg couscous, some spicy skewered chicken and falafels and salad, but again it seems boring.

I make a mean butternut squash rissotto. I might do that with the salads you suggested.

What about doing tapas so you could have some veggie/vegan options and some meat and fish ones as well?

That's what I usually do when we have people round. Tapas and a large cheeseboard, antipasti etc etc
But I feel like doing proper cooking today. The DC are out for the day and there's nothing better than a day spent leisurely shopping and cooking!

I might take a trip to borough market actually for inspiration, (then buy the things at the cheaper market nearer to home, lol)

Another favorite is small butternut squashes halved and dug out a bit then par-boiled before being stuffed with a type of lentil ratatouille and then for everyone who isn't vegan you can sprinkle cheese on top/ for the vegan some dairy-free bread crumbs? Serve with a rice salad or maybe your spicy cous cous.

It was a success!
We made stuffed peppers and butternut squash, roast beetroot, parsnip and sweet potatoes, a huge cous cous salad, lemony rice, oyster mushrooms in garlic, falafels, wraps, salsa, guacamole, soured cream , ciabbata and focaccia, lots of crackers, mini pittas, mozarella, brie and oak smoked cheddar, calamari, olives, pickled chillis, salt and pepper kettle chips,parma ham, chorizo and lots of wine!

It was great and we spent the whole evening just picking at the food, drinking and listening to music.

I went a litle overboard so have at least half of what I prepared in the fridge at the moment. We have invited friends over for dinner tonight to use up the leftovers!
