Dinner Tonight - What do I cook??

Have DPs brother and wife and young child coming to dinner tonight - I will need something quick and something I can get on the way home from the city in a small M&S or Sainsburys so nothing too complicated - was going to do sausage and Mash but she Muslim (I think does Ramadam so what else is out of the question) so that out of the window - give me some inspiration please!!

I chicken breast each, wrapped in foil with cut up sundried tomatoes, basil and a bit of goats cheese. With baby new potatoes and green beans.

Very easy and posh - if you don't like goat's cheese, then just blob of butter and salt and pepper....

If you can't find sundried tomatoes, then ripe baby cherry tomatoes.

The children will just eat the chicken.

Slap in oven for one hour.

Can also add cream or creme fraiche to juices to make nice sauce

What can I use instead of Goats Cheese - am 28 weeks pregnant so don't think I can eat that!!

if she is muslim the chicken would usually need to be halal, i know asda sell halal meat don't know about other supermarkets. it might be best to check or do veggie.

Bloody hell - she may just get some beans on toast at this rate - sure she has eaten Xmas dinner with us at DPs mums last year and the meat was not halal though - this is the last thing I bloody need am knackered (no sleep last night)- ribs aching and have to get hiome tidy round and sort all this out before 6 tonight!!

Buy a pack of oven roasted veggies from M&S and serve on top of a bed of steamed couscous. Buy some nice sounding salad dressing from M&S and mix up together.

Buy a bag of rocket salad and serve with same dressing and some parmesan shavings.

Grill some chicken breasts and serve. She can choose whether to have the chicken if it is not Halal. If she chooses not to have it the couscous and green salad is very substantial anyway.

Will take you next to no time to prepare!!

OOOOOhhhhh ta - that sounds easy and M&S is on the way home - will just have to try and make myself eat it whan I am gagging for Sausage and Mash - well there is always tomorrow!!

I do beachyheads with tallegio instead of goats cheese, and whizz it up with the tomatoes and basil then put it inside the chicken (which has been bashed - v. good for getting rid of stress) and roll up. If you want to be v. posh you can then slice through the chicken to make circles.
Or - if you want to go the cous-cous route, try serving it with a tub of greek yogurt with a bunch of chopped coriander and a few sliced spring onions stirred into it. And make the cous-cous with marigold stock to add flavour.

She should be fine with chicken - many muslims do not bother too much about teh halaness of meat, whilst still being quite strict about pork/alcohol etc.
