How do YOU make sweet potato 'chips'?

I am in the process of making some for the DSs to have with chicken and they are rather squishy although well crisped on the outside! I par boiled them - was this the wrong thing to do?

They're always quite squishy and you don't need to par boil them as they roast really quick.
