How to make mince smooth?

Whenever i make it, its hard and chewy and not in nice little bits like you get when you buy it in shepherds pie from the supermarket.

Im using lean steak mince so its good stuff.

Do you boil it, fry it or what?

Got friends coming for dinner and want to make a huge shepherds pie with Jersey royals for mash.

Fry the onions, grlic etc, then add the mince and brown briefly. Then add the liquid (stock, wine, tinned tomatoes, whatever) and carry on.

Don't cook it for ages in a dry pan else it dries out and goes knobbly.

(NB are you sure Jerseys mash well? I can never rememebr)

Im not sure about the jerseys, thought i would boil them then slice them and lust lay on top with a bit of cheese.

Ok so you say fry the mince. do you seperate it out first...only i dont eat it and dont fancy actually touching it with bare hands....

aha slicing would work, I get the picture now

You just tip the block of mince out of the packet and into the pan with the onions (remember to peel the paper off the bottom) and break it up a bit with the spatula as it cooks. You don't need to get it into teeny tiny bits.
