I'm really trying to eat more veg, but for a born carnivore it's difficult. Help

Nice recipes please for veg based meals (not totally veggie tho') please.

my blood pressure is slightly raised, and I've read somewhere that if I can eat 7 portions of fruit and veg, rather than just 5, it could help. Also read that people tend to eat more fruit than veg, altho the veg would be more beneficial.

But I'm a natural meat eater, in my life veg or salads form an accompaniment to the main item. lunch-time snacks automatiocally tend to be ham or cheese sarnies etc.

So go on, convert me.

How about vegetable quiche, with salad on the side.

I tend to put extra grated carrot/aubergine in my bolognaise sauce (children, mostly, don't notice).

Carrot soup with grated parmesan (or other cheese) and chives/parsley. Or some other veggie soup.

Fish pie with potato and carrot mash, served with mini sweetcorn, beans, asparagus.

Clumsymum - I think some of us are just made to be true carnivores...
I'm with you - a salad doesn't do it for me unless it comes with ham/cheese/fish. Oh and crusty bread and a glass of wine

Clumsymum, I have high BP and struggle to eat 5 a day let alone 7! Anyway, here's a list of the type of things I eat to get as much down me as possible. Don't forget that pulses count as one portion per day.

Veg samosas
Soup
Guacamole
Carrot/pepper/celery sticks with houmous
Falafel with pitta bread and salad
Thai Green vegetable curry
Veg stir fry
Chickpea and spinach curry
Any curry with dhal
Spanish type omelette
Veg kebabs

Smoothies
Milkshakes
Jordans Fruit bars (no added sugar etc)
Compote (can eat with porridge as well as ice-cream)
The usual desserts - crumbles, pies, fruit salad

Must be more but my mind's gone blank!

Try hummus with red peppers. It is lovely for dipping your carrot sticks into!
