you can, parboil them and roast them in their skins (cut the bigger ones in half), roll them in olive oil, some salt and whatever herbs/pepper you like

oh, i've never found that.....get the oil hot in the roasting tin first, then lob the potatos in, and sprinkle with rock salt & paprika , yum !
