Thanks sobernow. That sounds delish

Does it matter what fish is used?

No, it doesn't matter what fish. You can poach the fish in milk and then use that milk to make the roux.

We have a recipe that includes hard boiled eggs to bulk it out and thicken it slightly. Very tasty

Ok, poach fish (mix of white fish fillet and smoked fish is best) in milk.

take out the fish when cooked and keep the milk.

Slice fish into chunks and put in a dish with whatever else you want (peas, sweetcorn, onions, prawns...)

Melt a knob of butter in a pan and add a bit of flour to make a paste then add your milk and whisk continuously until it thickens (ie make a white sauce). Salt and pepper to taste and pour over your fish.

Top with potato and carrot mash and bake in the oven.
