Have a look at the Vegetarian Society's website. It has lots of information on becoming vegetarian, and lots of recipes as well.

If you would be happy using meat substitutes, you can use things like Quorn or soya mince as easily as using meat. Otherwise lentils, grains, pulses, beans (tinned or dried) are good.

There are loads of vegetarian cook books; anything by Cranks or Rose Elliot are well worth a look.

What kind of things do you like, what sort of recipes are you looking for?

More good recipes here. Another useful website might be Veggie Global.

we eat a lot of veggie stuff
Try a sausage casserole using the veggie sausages with mashed potato
try baking butternut squash instead of potato and filling with cous cous/rice
stuffed peppers
cauliflower/brocolli cheese
pasta bakes
corn fritters

Wigwambam has said everything I would have said. However I feel the need to contribute so:

The chickpea soup recipe on the Veg Soc pages is brill but would recommend halfing the amount of chilli and garam masala unless you have a powerful digestion system.

The older Cranks books are better than the newer ones which are a bit la di da IMO.

Tofu is bloody lovely whatever anyone else may say to you.

To make it easier at the beginning why not simply substitute meat with vegi alternatives?
e.g. Linda Mcartney pie, mash, veg, gravy
Holland and Barrett Linconshire style sausages (in freezer) made in to sausage casserole (cook sausages, put in dish with red pepper, onions, mushrooms, gravey, tinned tomatoes, cover with foil, and bake for 1 hour), serve with mash and green beans.
Vegiburger in a bun with home made potato wedges (add garlic and rosemary if you like them) and salad
Lasagne with vegetables instead of mince
shepherds pie with vegi mince
Vegetable curry and rice (add red lentils or chickpeas to the curry for protein)
Fahitas with dish of fried veg (aubergine, onion, courgette, peppers), dish of chilli (vegemince, tin tomatoes, tin kidney beans, cummin), home made guacomole (sp?), salsa..yummy. oh, and rice (am I a piggy?)
Will think of more ideas soon.

And sorry for all the spelling mistakes I have just spotted in that post...
