Really quick easy cheese sauce

for any mums like me who can't make cheese sauce with flour, here's a quick easy way to make a yummy one...

melt a knob of butter in saucepan..
add 1 or 2 dairylea or laughing cow cheese triangles...
keep stiring on low heat,
add small amount of milk until desired consistency...
voila!!!!
add to pasta or veggies or whatever!

But Katie it's soooooo easy to make it with flour! Go on give it a go, here is a blow by blow foolproof way...

Heat some butter in a saucepan until melted, say a level tablespoonful.

Add a level tablespoon full of flour.

Stir in with a wooden spoon until it all mixes together, then leave on a low heat for 2 to 3 mins, stirring every 30 seconds (look at it to check it's bubbling and make sure it's spread out across the bottom of the pan not in one big lump!) If you don't cook this mixture sufficiently, the gluten in the flour will not expand and you will get lumps.

Then add a little milk to the pan, turn up the heat and wait until the milk boils, then stir in rapidly with the wooden spoon. Let it bubble for a few seconds then stir rapidly again. Repeat until you have the consistency you require. Even better and quicker if you use a whisk.

Then grate in some cheese.

Dm (of the rissoles) showed me how to make a cheese sauce as per CD - is that the roux method? I think I managed once without lumps then changed to the foolproof cornflour all-in-one method. Just put your milk, butter seasoning and a tablespoon of cornflour into the pan, and keep stirring until thick then add the cheese, actually it still works even if you don't stir all the time and I've never had lumps doing it this way.

If you get lumps you can always just stick it through a sieve before you add the cheese.
But if you add you milk gradually and stir it in weel each time you should be OK.
