What do I need other than lentils?

Do you do meat? Pork/bacon goes well with those little green ones.

This is one I've done:

1 large onion, finely chopped
2 carrots, diced
1 leek, finely chopped
1 parsnip, diced
2 garlic cloves, crushed
1136ml/2 pints stock made with Bovril or Vecon
227g/8oz red lentils
1 x 397g/14oz can tomatoes with their juice
few sprigs of thyme and oregano
1 bay leaf
salt and freshly ground black pepper
2 tablespoons finely chopped parsley (optional)

  1. Put the onion, carrots, leek, parsnip and garlic in a large, heavy saucepan with 284ml/½ pint of the stock. Cover the pan and bring to the boil. Continue boiling for 5-10 minutes, then uncover the pan, reduce the heat and simmer gently over a low heat for about 20 minutes, until the vegetables are tender and syrupy.

  2. Stir in the lentils and cook over a low heat gently for 2 minutes, then add the remaining stock, the canned tomatoes and herbs. Simmer gently for about 45 minutes, until the soup thickens and the flavours amalgamate.

  3. Season to taste, and remove the bay leaf and herb sprigs. If wished, cool thoroughly and freeze, then defrost and reheat at a later date. Serve hot, sprinkled with parsley.

carmenere's spiced lentil soup...

These measures are approximate tbh. I find it probably needs a bit more stock, maybe twice as much. Up to you how thick you like it. and it works fine without the chilli if it's for kids.

2 carrots, chopped
2 onions, chopped
2 cloves garlic, chopped
large piece of ginger chopped
1 chilli pepper, chopped
1 red pepper, deseeded and chopped
1 stalk celery

Sautee the above gently in some oil for about 3-5 minutes
Then add -

a teaspoon each of ground cumin and coriander
About a cupful of red lentils
a tbl spoon tomato puree

Sautee for a few more minutes and add about 1pint veg stock, cook for 20 minutes and puree with a handheld blender. Season with salt and pepper

It's v nice and warming.
