Quick! What can i do with diced beef that isn't casserole?

forgot to but the wheat fres tock cubes and local shop doesn't have them so i need something wheat free, milk free and simple enough to do with the diced beef.

any ideas?

Skip the stock, use cornflour to thicken, wine and tinned tomatoes for liquid?

Fry it with onions/peppers/mushrooms and have with noodles and soy sauce, or rice?

will it be ok with out the stock?

i use wine anyway and flour the beef but prsumed that would be way too heavy without stock?

Hot pot/pie ? Perhaps fry off the meat with some onion , add tomato puree/gravy/hot water to meat juices and flavour with herbs and pepper. Perhaps add par cooked carrot and other root veg/celery. Put in casserole and top with thinly sliced potato.

Can you eat cocount milk? I made a curry with diced beef, coconut milk, butternut squash and curry paste last week and it was really nice and very easy. Didn't make it too hot and the children loved it.

hadn't even thought of curry!

i fried some red onions ang garlic, put them in the pot with peppers carrots and fried streaky bacon. coated the beef in potato flour and herbs and seasoning, fried it off, chucked it in the pot, poured in red wine and covered in sliced potato. it's in the oven at 160 so lord knows what it'll turn out like

make fajitas - doesn't matter if it's cubes instead of strips!!
I never use stock in my casseroles - just blitz some red pepper, courgette and garlic with a tin of tomatoes (kids would NEVER eat all those if they even suspected they were in the sauce yet it's their fave!), brown the meat and onions, stick it all in the slow cooker, add herbs/seasoning (I usually use basil and oregano as they're my faves but use what you like), add some balsmaic vinegar if you fancy it or wine, whatever! Leave on low for hours so meat is falling apart. When ready to eat thicken with tomato puree. I love it!! I call it Italian stew and serve with pasta as dd is going through a not eating potatoes stage. have also done it with chilli instead of herbs and served with rice.

yes, am somewhat annoyed i didn't have tomato purree for it, aldi haven't had any in weeks so i've gone through my emergancy stash. couldn't fit a can of tomatoes in the pot as it was overflowing

think i'll be stealing your recipe for next week though leslaki, even uber picky dp and dd would eat that i'm sure
