jacket potatoes filling

hi all im looking for jacket potatoe fillings that go with cheese for a nearly twelve month old ds (oh he hates beans and ham so there no good) any other ideas would be extreamly gratefull

tuna, mayo & sweetcorn (in fact you can get John West cans that are already pre mixed! Very quick and easy...)

chilli con carne (especially if you've had it yourself the night before, just make extra and reheat as a potato filling - might be a bit strong for a 12 month old, but ds1 loved the kidney beans from a very young age)

I always like scooping the insides of the baked potato, mashing them, mixing grated cheese into the mash, spooning it back into the shells and browning off under the grill... yum.

Okay, I'm hungry now...

souffle baked spuds
get about 3 or 4 cooked spuds half them, scrape out the middle - then mix with eggyolk (optional) cheese and chopped tomatoes(and mustard / herbs / spring onion)
then whip up the egg white until 'stiff peaks stage' fold back into potato mix put back in a medium oven for about 10/20 mins to cook egg through and melt cheese.(until they are golden brown on top)
(or for an easy healthy receipe what about grated carrot/ cheese /fromage frais / sultanas /parsley)

thanks all i will definatley try the cheese and chives and will look out for the ready mixed tuna mayo and sweetcorn sounds like that would make life alot easier tinytoes the recipe sounds lovely but i think i will leave that until i got time to care about being fussy about cooking thats why i was looking at jacket potatoe filling quick easy which is what i need most at lunch before rushing like a maniac
oh and my ds has been eating chilli since he was about eight months old so i might try that in a spud because i always make him a batch and frezze it when makining it for me and dp just adds extra tomatoe into his
