Whats your easiest meal to prepare and cook?

And no convenience ready meal type foods or re-heats allowed!!!

For me it will be Pasta in veg & tomatoe sauce
Fry a few veg (onion, mushroom, celery, peppers usually). Add couple of tinnes tomatoes, garlic & tom puree, simmer. Add cooked pasta & ham/pepperoni and VIOLA. For me and DP I usually add crushed chillis too and turn it into an arrabiatta.

Usually makes enough to stick half in a oven dish, sprinkle with cheese & bake in oven for the next day - but I guess that would count as a re-heat

Yesterday I fried some salmon in a mixture of olive oil and butter, and at the same time boiled a few new potatoes with peas and beans. Drain the veg, add butter. Squeeze lemon juice over everything. Very quick and easy! Or microwave salmon with lemon slices and butter (even quicker). Leave out butter if dieting (mum's portion).

Aside from the classic pasta/pesto/pea combo, I whipped up a tasty 'salad' that me and tow kids all liked every bit of, which rarely happens! I think it was the fact that everything was in similar sized lumps! It did rely on me having some cold potaotes lying about, but maybe could use a tin?

Here is my recipe:

  1. Chop up cold tats
  2. Add tin of peach slices
  3. Add some cubed brie and packet of king prawns (half price in sainsburys) Mix it all up with some creme fraiche or equivalent.

YUM!

Thanks for this thread: useful ideas that don't involve skinning tomatoes or dipping things in egg and then flour...I keep reading so called easy baby recipes that are so fiddly... I'm afraid 30 mins is my absolute max for meal preparation!!

Hey MrsBabookaloo, don't knock dipping in flour and egg.... I did pan-fried parmesan-crusted cod from the 5 minute section of the Jamie Oliver 'Jamie's Dinners' books on Sat and it took less time than tomato pasta - 10 mins start to finish.

you just sprinkle the cod with flour, dip in egg and dip in grated parmesan and pan fry for a couple of minutes each side, serve with salad and bread and butter.

Def going in my list of quick dinners.
