If I were to make my own wheat-free bread, what are the best flours to use?

I think the only nice wheat free bread is corn bread myself. When we were wheat free, I found bread was the only thing which was really hard to beat. I only missed wheat because of bread.

This book has lots of ideas for different combinations - he talks about spelt and rye a lot but there are recipes using rice flour as well.

I'm thinking of trying wheat-free for a while. I've noticed that it seems to be the thing that causes me to bloat and get stomach cramps as soon as I come off my lc eating. Can do without pasta but I do like bread from time to time.

I used to make scones from barley flour.
I got a reaction from spelt.

does soda bread have the same effect?

Orm - definitely look at the Bread Matters book if you can. Apparently there is lots of evidence that the reason for all these wheat/gluten intolerances today may be that the fast fermentations used in industrial baking do not alter the wheat to make it digestible as old slower processes used to.
He also gives methods for making bread which make wheat more easily tolerated - might be worth a try?

wheat free pasta is fine, but we cant find a bread we like yet (DS1 on gluten free courtesy of BIBIC_ its their favourite torture lol ). I just got a bag of doves farm bread flour though and am intending to whip through bread amchine tonight.

You can't just replace wheat flour with a wheat free as you need a binder (xanthan gunm is the norm), but a complete GF bread flour should be fine as it is already added.

I prefer granary type darkish bread anyway. I'm one of those odd sort who never craves white bread.

I'll try some gluten free flour as a base perhaps with added seeds and perhaps some rye flour. Would that work ?
