For things with red onion in or just the onion on it's own? I think Jamie Oliver does baked red onion with thyme butter. Otherwise I use them in loads of things - cous cous, salads, pasta etc.

i was thinking maybe a red onion soup or marmalade or something.

happy for any type of recipe though as i have lots to use up.

I used some last night

Chicken breasts in a dish, cover with a tin of ratatouille, crushed garlic, some whole garlic cloves, few olives and some red onion quarters. Cover with foil and bake in the oven

Hope this one isn't too late -

Beef and Rocket Salad

Thinly slice two red onions and fry until softened. Then add in 500g sirloin steak also thinly sliced and cook briefly until seared.

Meanwhile place 150g rocket leaves and 1/2 cup of parmesan shavings in a big serving bowl. Throw the onion and beef on the top when it is all cooked, then toss it all together with 2 tblspns olive oil and 2tblspns balsamic vinegar.

I make this a lot for guests - you can vary the proportions of all ingredients to suit your taste - and usually I go with lots of rocket so it makes a big pile, when the hot stuff goes on top it sort of settles down a bit, and it is amazing how much you can eat of it!!
